Lactase is an enzyme produced in the small intestine, which plays a vital role in the splitting of lactose into its two components: glucose and galactose, a process necessary for its absorption by our organism. If lactase levels are low or it does not perform well, there are difficulties in digesting lactose.
Lactose intolerance produces symptoms such as abdominal pain and swelling, diarrhea, flatulence, cramping, vomiting or nausea. They usually appear between thirty minutes and two hours after having eaten foods containing lactose, and disappear between three and six hours later.
Usually, the symptoms of this intolerance disappear when milk productsor other products containing lactose are removed from the diet. But, the lack of milk in the diet can produce lack of calcium, vitamin D, riboflavin and proteins. The most common complications are weight loss and malnutrition.
Therefore, it is essential to consume other products rich in these substances, such as vegetables such as spinach, Swiss chard or broccoli; legumes such as white beans, lentils and chickpeas; the egg yolk; fish such as sardines, salmon and sole; the prawns and all the nuts (except the chestnut).
In the case of a child with lactose intolerance, it is very important that both parents and the child:
1. Know which foods incorporate lactose (milk, sausages, pâtés, margarines, ice cream, sauces, some sausages, enriched cereals, instant soups and prepared foods).
2. Learn to read labels of packaged foods to check whether a food is lactose-free or not, and warnings such as "may contain traces of milk".
3. Know lactose-free dairy products ya, since there are milk brands that market ranges of products without lactose, which may make it easier to partially or completely exclude dairy products from a diet.4.
Experiment in the kitchen and look for lactose-free recipes that can be prepared at home. Menu prepared by Cristina Abascal. Nutritionist.
